A simple addition goes so far
This one addition can turn a great dish into an insanely great dish, if you can get over the raw egg thing.
For some reason this always works better with starches. In this case the pasta and pesto above. It was already a great dish but... I've also done this with grits, shrimp and grits, a bowl of rice, sticky rice Asian style definitely stands out as a great dish to toss an egg yolk on.
If a single item that could add the depth of a good sauce was available in just about all of our fridges, took no time to prepare, was at your fingertips wouldn't you want to use it? It's so good. Plus, you get to use the egg white for cocktail after dinner. Or is that too far as well?
